Support the Assistant Food and Beverage Manager in coordinating and administering the policies of the Beverage Department and the training of the beverage team concerning the sales of beverages in restaurants, lounges, and banquets. Ensure compliance set by service standards. Maintain all ABC controls in accordance to state and federal laws and regulations. Ensure guest satisfaction to current acceptable levels.

Assist the Food and Beverage Managers in training, supervising, and directing team in all beverage operations in the hotel. Communicate effectively, both verbally and in writing, to provide clear direction to the team. Assign and instruct Food and Beverage team in details of work. Monitor progress and give consultation when needed. Ensure all policies and procedures established by Olshan Properties and Hilton Columbus are followed.
Help develop, implement, and maintain basic operating standards for Beverage Services in compliance with Federal, State, Local and Hilton Columbus guidelines. (e.g. Employee Alcohol Awareness Training and Compliance)
Assist department staff during peak activity periods. Speak with every guest to ensure the highest quality of service. Visually inspect food and beverage items to ensure timeliness of delivery and preparation, adherence to specifications, and correct presentation.
Assist in organizing and conducting monthly meetings.
Resolve complications such as payment issues, faulty food and beverage orders, etc. Field guest and personnel complaints by conducting a thorough investigation of the situation in order to choose the most effective solution.
Maintain good communications between fellow team members and other departments of the hotel. Conduct daily pre-shift meetings for the purpose of sampling the daily specials, identifying special guests, groups in house, suggestive selling, etc. Encourage and promote an active team member empowerment atmosphere.
Replenish beverages, as requested, within legal limits.
Frequently check with guests about satisfaction. Present guest with check promptly, thanking them and inviting them to return. Close out guest checks in the Point of Sale system. Handle all payments in accordance with the Hilton Columbus’ policies and procedures.
Ensure daily outlet reports are turned into the Food and Beverage Managers.
Maintain proper set up and cleanliness of bar and assigned station before, during, and after shift. Maintain proper bar supplies, to include liquor, beer, condiments, paper goods, etc., for all beverage team members.
Compose weekly work schedules using approved labor and revenue forecast ensuring dollars spent do not exceed labor forecast. Calculate daily and weekly payroll figures using time sheets and labor tracking report. Submit payroll audits to accounting daily. Ensure proper tip declarations are made by all team members.
Maintain top physical condition of all specified table tops, chairs, booths, high chairs, etc. Create any necessary work orders for the repair of equipment and turn into the engineering dept.
Communicate any potentially hazardous situations, emergencies or other threats to the security of the guests, employees or hotel assets. Apply knowledge of how to handle emergency situations in accordance to set standards and policies. Check and maintain established par stock levels. Conduct weekly inventory of the stock. Participate in weekly Food & Beverage inventories. Help develop and enforce the policies and procedures established by Olshan Hotel Management and Hilton Columbus.
In conjunction with the Food and Beverage Managers, check and maintain established par stock levels. Conduct weekly inventory of the stock. Maintain liquor cost at or below acceptable levels.
