Assists in the supervision of all food and beverage operations, with an emphasis on breakfast, lunch and dinner restaurant operations, Room Service, Herb N’ Kitchen Grab N’ Go, Easton Social, to ensure that the highest quality standards are met for food, service, cleanliness, and marketing of all operations. Oversee the hiring, training and directing of the restaurant staff. Interact positively with guests promoting the hotel facilities and services. Resolve conflicts to the satisfaction of all involved parties. Answer telephones in a clear voice, coordinate and document reservations. Organize special events in the restaurant to promote sales in slow periods. Maintain healthy communications with all departments, attend relevant meetings, and disseminate pertinent information to team members. Hire, train, supervise and schedule food and beverage staff in accordance with business needs, productivity and service standards. Plan and conduct Monthly Hilton Learning Conversations and monthly department meetings to illustrate proper service techniques and etiquette. Monitor staff performance, give constructive feedback, and ensure each team member meets the high standards as set by management policy for guest satisfaction. Define performance requirements and develop action plans for achievement of goals. Supervise the set up and operations of the restaurants to include placement of linens, silver, china, and glassware.
Visually inspect rooms and equipment before and after meal periods for cleanliness, proper inventory of equipment, and staffing. Ensure staff is ready for work in proper uniforms, nametags and is in compliance with grooming standards. Ensure pre shift meetings are done daily in all areas. Verbally communicate in a calm positive manner, during the course of operations, the needs between the kitchen, beverage, restaurants, and engineering staff, as well as the guest to ensure timely execution of events, quality service and adherence to all applicable federal, state and local safety and health regulations and corporate standards. Implement new menus and promotions, such as holiday and special event promotions. Create and execute a marketing plan for all four outlets focusing on both Average Check and increasing covers to achieve / exceed budgeted revenues, through social media channels, in-house guest promotions etc. Check for proper billing and posting of all room and credit card charges in Food and Beverage. Monitor staff attendance in accordance with posted schedules and labor standards, adjust and reassign server stations, as necessary in order to provide service in all areas. Prepare a weekly forecast.
